November Update

As the outside tasks with the bees reduce to basic feed and visual checks, our focus at Potterne Honey HQ turns to the Christmas season.

We have several markets and Christmas fayres booked, in preparation.  Several pounds of beewax have been rendered from our hives and turned into Christmas themed candles, buckets of honey jarred and our certified cosmetics of soaps and lip balms made, the house has a great scent of beeswax, Christmas and soaps.

The gift sets consist of candles, soaps and honey in various combinations.

We will also be supporting the Village Christmas fayre on the 3rd December, with a stall in the village hall, drop by and say hello.

Keeping in the festive theme, one of our family favourites is honey glazed ham, perfect with the evening buffet or the boxing day sandwich.

Below is one of our favourite recipes that we would like to share with you, taken from our family cookbook.

For a really special Potterne Honey Christmas Roast Ham, try the following glaze;

  • 2 x tablespoons of honey
  • 2 x tablespoons of fresh orange juice
  • Cloves

Bake the ham in the usual way, remove the rind and score the meat with a Criss cross lines to form squares. Stick a clove in the centre of each square and pour over the combined honey and orange juice. Return to the oven at 200°C (180°C fan) or gas mark 6, and bake for a further 15 minutes, basting frequently, until the ham is nicely glazed.
